Ah, the great winemaking regions of the world: Bordeaux, Napa Valley and…Denver? Yes, they’re growing grapes in Colorado and winemaker Ben Parsons is using them to craft some very distinct offerings at
Infinite Monkey Theorem, his Denver-based label.
The winery’s name indeed refers to a popular theorem of probability – namely, that if you give an infinite number of monkeys an infinite amount of time, they can pretty much accomplish anything. But it really speaks to Parsons’ quirky sensibility, which is reflected not only in his choice of locale (Colorado does have a wine-growing tradition, but it’s hardly California), but also his packaging (some of Infinite Monkey’s wines have been released in cans).
