Combine Chef Matt Selby’s culinary talent with a stellar Jefferson Park location in the shadow of Sports Authority Field at Mile High Stadium, and Corner House is sure to be a hit.
Selby has built a name for himself on the Denver restaurant scene with popular restaurants such as
Vesta Dipping Grill,
Steuben’s and
Ace. Beginning Jan. 4, he’ll be dishing up breakfast lunch and dinner from the corner location of the RiverClay condominium building at 2240 Clay St.
“We’re dying to get in there and start rolling,” says Bar Manager Gerard Collier. “We are also Broncos fans. We have a huge projector and we’ll be playing the games on Sundays.”
The menu features small plates ranging from $10 to $20. Dishes include curry smoked chicken thigh salad panini with colorado brie, pickled onions and scallion mayonnaise on the lunch menu; the Szechuan pepper venison loin with chanterelle mushroom conserva, tuscan kale and beaujolais butter sauce on the dinner menu; and the rosemary ginger crème brûlée on the dessert list. Corner House will serve brunch on weekends.
Selby will use locally sourced products in the kitchen. Collier plans to do the same at the bar.
“We have a decent wine list,” Collier says. “Our whole focus behind the bar is to try to stay local -- local spirits, beer and wine. And if not local, at least domestic.”
